“There’s just something about Colombia.
I have had few Colombian offerings that I don’t enjoy. The full bodied cups of citric sparkle, the chocolate covered fruit, the long lingering finishes that make you want another sip. Consistently, Colombia produces coffees that can be roasted to satisfy any palette, and this decaffeinated offering is no exception.
The name Decaf de Caña refers to the style of decaffeination, known colloquially as the Sugarcane Process, where coffee is soaked in a mixture of water and ethyl acetate, a naturally occurring byproduct of sugarcane (caña) fermentation, until caffeine is no longer detected. This process partially cooks the coffee seeds, necessitating very different roasting parameters than the average caffeinated bean.
After adjusting those parameters, this coffee presents a lovely, balanced cup of mild, sweet cacao that is best enjoyed after dinner. Remember, decaf is for coffee lovers. So please, at any time of day, enjoy.
